12 oz penne pasta

2 tablespoons olive oil

1 lb boneless, skinless chicken breasts, cut into strips

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup spinach, fresh

1 cup heavy cream

½ cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Sauté Chicken: In a large skillet over medium heat, add the olive oil. Once hot, add the chicken strips, seasoning with salt and pepper. Cook until golden brown and cooked through, about 5-7 minutes. Remove chicken and set aside.

      Prepare Sauce: In the same skillet, add garlic and sauté for about 1 minute until fragrant. Add cherry tomatoes and cook until they start to soften, about 3-4 minutes.

        Add Spinach and Cream: Stir in the spinach until wilted. Then, pour in the heavy cream and Italian seasoning. Bring to a gentle simmer.

          Combine Ingredients: Add the cooked chicken back to the skillet, followed by the drained pasta. Gently toss to combine, and then mix in the Parmesan cheese, ensuring the pasta is coated in the creamy sauce. Adjust seasoning with salt and pepper as needed.
