Ingredients

1 cup all-purpose flour

1/3 cup unsweetened cocoa powder

1/4 cup granulated sugar

2 tablespoons brown sugar

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 large egg

1 cup milk (or almond milk for a dairy-free option)

1/4 cup vegetable oil (or melted coconut oil)

1 teaspoon vanilla extract

1/2 cup chocolate chips (dark or semi-sweet)

Optional toppings: whipped cream, fresh berries, maple syrup, or more chocolate chips

Instructions

Mix Dry Ingredients: In a large bowl, combine the flour, cocoa powder, granulated sugar, brown sugar, baking powder, baking soda, and salt. Whisk together until well blended.

Prepare Wet Ingredients: In another bowl, beat the egg and then add the milk, vegetable oil, and vanilla extract. Whisk until combined.

Combine Mixtures: Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix; it's okay if some lumps remain. Fold in the chocolate chips, ensuring they are evenly distributed.

Preheat the Pan: Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.

Cook the Pancakes: Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface (about 2-3 minutes), then flip with a spatula and cook for another 1-2 minutes until the other side is set and slightly crispy.

Serve Warm: Stack the pancakes on a plate and serve hot topped with whipped cream, fresh berries, maple syrup, or additional chocolate chips as desired.
