For the Cookie Layer:

½ cup (115g) unsalted butter, softened

½ cup (100g) brown sugar, packed

¼ cup (50g) granulated sugar

1 large egg

1 tsp vanilla extract

1 ½ cups (190g) all-purpose flour

½ tsp baking soda

¼ tsp salt

1 cup (175g) chocolate chips

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line an 8x8-inch square baking pan with parchment paper, leaving some overhang for easy removal.

    Make the Brownie Layer:

      a. In a medium saucepan, melt the ½ cup of butter over low heat.

        b. Once melted, remove from heat and stir in sugar, eggs, and vanilla extract until well combined.

          c. Sift in flour, cocoa powder, salt, and baking powder. Mix until just combined (don’t overmix).

            d. Fold in the chocolate chips and set aside.

              Prepare the Cookie Layer:

                a. In a mixing bowl, beat together the softened ½ cup of butter, brown sugar, and granulated sugar until light and fluffy.

                  b. Add in the egg and vanilla extract, mixing until well combined.

                    c. In another bowl, whisk together flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.

                      d. Fold in the chocolate chips.

                        Layer the Batter:

                          a. Spread the brownie batter evenly in the prepared pan.

                            b. Next, carefully drop spoonfuls of the cookie dough on top of the brownie layer, spreading it gently to cover.

Bake: Place the pan in the oven and bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs (not wet batter).

Cool and Serve: Allow the brownies to cool in the pan for about 15 minutes. Use the parchment overhang to remove from the pan and transfer to a wire rack to cool completely before cutting into squares.
