1 lb (450g) boneless, skinless chicken thighs

2 tablespoons vegetable oil

4 cloves garlic, minced

1 thumb-sized piece of ginger, grated

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup snap peas

1/4 cup soy sauce

1/4 cup honey

2 tablespoons fish sauce

1 tablespoon rice vinegar

1 teaspoon red chili flakes (adjust to taste)

1 tablespoon fresh lime juice

Chopped fresh cilantro, for garnish

Cooked jasmine rice, for serving

Instructions
 

Marinate the Chicken: In a bowl, combine the soy sauce, honey, fish sauce, rice vinegar, red chili flakes, and lime juice. Whisk until well mixed. Add the chicken thighs, ensuring they are coated in the marinade. Cover and let marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

    Prepare the Stir-fry: Heat the vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the minced garlic and grated ginger, stirring for about 30 seconds until fragrant.

      Cook the Chicken: Remove the chicken from the marinade (reserve the marinade) and add it to the skillet. Sear the chicken for about 5-7 minutes per side, until cooked through and golden brown. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C).

        Add Vegetables: Once the chicken is cooked, add the sliced red and yellow bell peppers and snap peas to the skillet. Stir-fry for an additional 3-4 minutes until the vegetables are tender but still crisp.

          Finish the Sauce: Pour the reserved marinade over the chicken and vegetables, cooking for another minute to allow the sauce to thicken slightly.

            Serve: Remove from heat and garnish with chopped fresh cilantro. Serve the Sweet and Spicy Thai Chicken over jasmine rice for a complete meal.
