2 large red onions, thinly sliced

2 tablespoons sumac

3 tablespoons olive oil

1 tablespoon apple cider vinegar

1 tablespoon honey or maple syrup

1 teaspoon sea salt

Freshly cracked black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large bowl, combine the thinly sliced red onions with the sea salt. Let the onions sit for about 15 minutes; this will help soften them.

    In a separate bowl, whisk together the olive oil, apple cider vinegar, honey (or maple syrup), sumac, and a pinch of freshly cracked black pepper.

      After the onions have softened, rinse them under cold water to remove excess salt. Drain and pat dry with a clean towel.

        Add the rinsed onions to the dressing mixture and toss until well coated.

          Let the mixture marinate for at least 30 minutes at room temperature for the flavors to combine, or refrigerate for up to 2 hours for a more intense flavor.

            Before serving, give the onions a final toss, garnish with chopped fresh parsley, and enjoy!
