2 large red onions, thinly sliced

2 tablespoons sumac

2 tablespoons olive oil

1 tablespoon fresh lemon juice

1 teaspoon sea salt

1 teaspoon black pepper

1 tablespoon chopped fresh parsley (for garnish)

Optional: 1 teaspoon chili flakes for a spicy kick

Instructions
 

In a large mixing bowl, combine the thinly sliced red onions and sprinkle them with sea salt. Let them sit for about 10 minutes to soften and release their natural juices.

    After 10 minutes, rinse the onions under cold water to remove excess salt and drain them well.

      In a separate small bowl, whisk together the olive oil, fresh lemon juice, sumac, black pepper, and optional chili flakes until well combined.

        Add the rinsed onions to the dressing in the bowl, tossing gently to ensure all the onions are coated evenly.

          Allow the mixture to marinate for at least 30 minutes in the refrigerator for the flavors to meld together.

            Before serving, give the onions a final stir and transfer them to a serving dish. Garnish with chopped fresh parsley.
