For the Fruit Filling:

2 cups fresh strawberries, hulled and sliced

2 cups fresh peaches, pitted and sliced

1/4 cup granulated sugar

1 tablespoon lemon juice

1 tablespoon cornstarch

1 teaspoon vanilla extract

For the Crisp Topping:

1 cup rolled oats

1 cup all-purpose flour

1/2 cup brown sugar, packed

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup cold unsalted butter, cut into small cubes

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Fruit Filling: In a large mixing bowl, toss together the sliced strawberries, sliced peaches, granulated sugar, lemon juice, cornstarch, and vanilla extract until the fruit is well coated. Transfer the fruit mixture to a greased 9x13 inch baking dish.

      Make the Crisp Topping: In a separate bowl, combine the rolled oats, flour, brown sugar, cinnamon, and salt. Mix thoroughly. Add the cold butter cubes to the dry ingredients, and use your fingers or a pastry cutter to blend until the mixture resembles coarse crumbs.

        Assemble the Crisp: Evenly distribute the crisp topping over the fruit filling in the baking dish, covering the fruit completely.
