Steak & Cheese Dirty Fry Burritos

1 lb flank steak, thinly sliced

1 tablespoon olive oil

2 teaspoons garlic powder

2 teaspoons paprika

Salt and pepper to taste

4 large flour tortillas

2 cups frozen French fries

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 cup diced bell peppers (assorted colors)

1 cup diced onions

1 jalapeño, diced (optional for spice)

½ cup sour cream

¼ cup salsa

Fresh cilantro for garnish (optional)

Instructions
 

Cook the Fries: Preheat your oven to 425°F (220°C). Spread the frozen French fries on a baking sheet in a single layer. Bake according to package instructions until they are crispy and golden, about 20-25 minutes.

    Prepare the Steak: While the fries are baking, heat the olive oil in a large skillet over medium-high heat. Season the flank steak with garlic powder, paprika, salt, and pepper. Once the oil is hot, add the steak slices in a single layer. Sear for about 3-4 minutes on each side until browned and cooked to your desired doneness. Remove from heat and set aside.

      Sauté the Veggies: In the same skillet, add the diced bell peppers, onions, and jalapeño (if using). Sauté for about 5-7 minutes until they are softened and slightly caramelized. Season with a pinch of salt.

        Assemble the Burritos: Lay a tortilla flat on a clean surface. Start by placing a layer of steak in the center. Add a generous amount of sautéed veggies, followed by a handful of crispy fries and a mix of the shredded cheddar and Monterey Jack cheeses.

          Wrap It Up: Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top. Repeat with the remaining tortillas and filling.

            Grill the Burritos: Heat a non-stick skillet or a griddle over medium heat. Place the burritos seam-side down in the skillet. Cook for about 3-4 minutes on each side until they're golden brown and the cheese is melted.

              Serve: Slice the burritos in half and serve with sour cream, salsa, and fresh cilantro for garnish.
