Spinach and Feta Quesadillas (20 minutes)

Try these delicious Spinach and Feta Quesadillas for a quick and healthy meal! Packed with fresh spinach, tangy feta, and gooey mozzarella, this recipe comes together in just 20 minutes. Sauté onions and garlic, mix with cheeses, and fold into tortillas for a crispy delight. Perfect as a standalone snack or paired with salsa and sour cream. Ingredients
  

2 cups fresh spinach, chopped

1 cup feta cheese, crumbled

1 cup shredded mozzarella cheese

1 small onion, finely chopped

2 cloves garlic, minced

4 large flour tortillas

1 tablespoon olive oil

Salt and pepper to taste

Salsa and sour cream for serving (optional)

Instructions
 

Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.

    Add the minced garlic and chopped spinach to the skillet. Cook together for another 2-3 minutes, stirring until the spinach wilts. Season with salt and pepper.

      Remove the skillet from heat and stir in the crumbled feta and shredded mozzarella cheese until combined.

        Wipe the skillet clean and place it back on the stove over medium heat.

          Place one tortilla in the skillet, and spread a generous portion of the spinach and cheese mixture on one half. Fold the tortilla over.

            Cook for about 3-4 minutes on one side or until the bottom is golden brown and the cheese is melting. Carefully flip the quesadilla and cook the other side for another 3-4 minutes.

              Remove from the skillet and let it cool for a minute before slicing into wedges. Repeat with the remaining tortillas and filling.

                Serve warm alongside salsa and sour cream if desired.
