Spicy Jalapeno Chicken

1.5 lbs boneless, skinless chicken thighs

3 fresh jalapenos, finely chopped (seeds removed for less heat)

4 cloves garlic, minced

1 medium onion, finely chopped

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon salt (or to taste)

½ teaspoon black pepper

Juice of 1 lime

Fresh cilantro for garnish

Marinate the Chicken: In a large bowl, combine the chopped jalapenos, minced garlic, chopped onion, olive oil, smoked paprika, ground cumin, chili powder, salt, black pepper, and lime juice. Mix well to create a marinade.

    Add the chicken thighs to the bowl, ensuring they are completely coated in the marinade. Cover and let it marinate in the refrigerator for at least 30 minutes, or ideally, 2 hours for maximum flavor.

      Preheat the Grill: If using a grill, preheat it to medium-high heat. If using a grill pan, heat over medium heat on the stovetop and lightly oil the surface.

        Cook the Chicken: Remove the chicken from the marinade and shake off any excess. Grill the chicken thighs for about 6-7 minutes per side, or until they are cooked through and have nice grill marks. The internal temperature should read 165°F (74°C).
