Spicy Honey-Lime Chicken

4 boneless, skinless chicken thighs

1/4 cup honey

2 tablespoons lime juice (freshly squeezed)

1 tablespoon lime zest

2 cloves garlic (minced)

1 teaspoon chili powder

1/2 teaspoon cayenne pepper (adjust to taste)

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh cilantro (for garnish)

Lime wedges (for serving)

Instructions
 

Marinate the Chicken: In a bowl, whisk together honey, lime juice, lime zest, minced garlic, chili powder, cayenne pepper, smoked paprika, salt, and pepper. Add the chicken thighs and ensure they are well coated. Cover the bowl and let marinate in the refrigerator for at least 30 minutes, preferably 2 hours.

    Preheat the Grill or Pan: Preheat your grill to medium-high or heat a large skillet over medium heat. If using a skillet, add olive oil to coat the bottom.

      Cook the Chicken: Remove the chicken from the marinade and allow excess marinade to drip off. Place the chicken on the grill or skillet. Cook the chicken thighs for about 6-7 minutes per side, or until they are cooked through with an internal temperature of 165°F (75°C) and have a nice caramelized exterior.

        Rest and Slice: Once cooked, remove the chicken from the heat and let it rest for about 5 minutes. This allows the juices to redistribute. Slice the chicken into strips.

          Serve: Arrange the sliced chicken on a serving platter. Drizzle with any leftover marinade that has been boiled for safety if desired. Garnish with fresh cilantro and serve with lime wedges on the side.
