2 ripe bananas, mashed

1 cup all-purpose flour

1/2 cup sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup buttermilk (or milk with 1 tsp lemon juice)

1 large egg

1 teaspoon vanilla extract

1/2 cup chopped walnuts (optional)

Oil for frying (about 1/4 cup)

Powdered sugar for dusting

Maple syrup for serving

Instructions
 

In a large mixing bowl, combine the mashed bananas, buttermilk, egg, and vanilla extract. Mix until smooth.

    In another bowl, sift together the flour, sugar, baking powder, baking soda, cinnamon, and salt.

      Gradually fold the dry ingredients into the wet ingredients, stirring until just combined. If using, fold in the chopped walnuts.

        Heat a large skillet over medium heat and add a thin layer of oil (about 2 tablespoons). Once the oil is hot, reduce the heat to medium-low.

          Using a tablespoon or an ice cream scoop, drop spoonfuls of the batter into the skillet, leaving space between each fritter.

            Cook for about 3-4 minutes on one side, or until bubbles form on the surface and the edges look set. Carefully flip and cook for an additional 2-3 minutes until golden brown.

              Remove the fritters and place them on a paper towel-lined plate to absorb excess oil. Repeat the process with the remaining batter, adding more oil as necessary.

                Once all fritters are cooked, dust with powdered sugar and serve warm with maple syrup.
