For the Shrimp:

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

½ teaspoon cayenne pepper

Salt and pepper to taste

Juice of 1 lime

For the Avocado:

2 ripe avocados, sliced

Juice of 1 lime

Salt to taste

For the Mango Salsa:

1 ripe mango, diced

1/2 red onion, finely chopped

1 jalapeño, seeded and minced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

For the Lime-Chili Sauce:

1/2 cup Greek yogurt or sour cream

Juice of 1 lime

1 teaspoon chili powder

1 teaspoon honey (optional)

Salt to taste

For the Bowls:

2 cups cooked quinoa or brown rice

Fresh cilantro, for serving

Lime wedges, for garnish

Instructions
 

Prepare the Shrimp:

    - In a bowl, toss the shrimp with olive oil, minced garlic, smoked paprika, cayenne pepper, salt, and pepper.

      - Add lime juice and let marinate for 15-20 minutes.

        Make the Mango Salsa:

          - In a mixing bowl, combine the diced mango, red onion, jalapeño, and chopped cilantro.

            - Add lime juice and season with salt. Mix well and set aside.

              Prepare the Lime-Chili Sauce:

                - In a small bowl, whisk together the Greek yogurt (or sour cream), lime juice, chili powder, honey (if using), and salt.

                  - Adjust seasoning to taste and set aside.

                    Cook the Shrimp:

                      - Heat a skillet over medium-high heat. Once hot, add the marinated shrimp in a single layer.

                        - Cook for about 2-3 minutes per side, or until shrimp are pink and opaque. Remove from heat.

                          Prepare the Avocado:

                            - In a small bowl, toss the avocado slices with lime juice and a pinch of salt to prevent browning.
