Shrimp and Avocado Bowls with Mango Salsa & Lime-Chili Sauce

Ingredients
  

For the Shrimp:

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper

Salt and pepper, to taste

For the Avocado Base:

2 ripe avocados, diced

Juice of 1 lime

Salt, to taste

Fresh cilantro, chopped (for garnish)

For the Mango Salsa:

1 ripe mango, diced

1/2 red onion, finely chopped

1 jalapeño, seeded and minced

Juice of 1 lime

Salt, to taste

2 tablespoons fresh cilantro, chopped

For the Lime-Chili Sauce:

1/4 cup plain Greek yogurt

Juice of 1 lime

1 teaspoon chili powder

Salt, to taste

Water, to thin (if necessary)

For Serving:

Cooked rice or quinoa (optional)

Lime wedges

Instructions
 

Marinate the Shrimp:

    In a mixing bowl, combine the olive oil, minced garlic, smoked paprika, cayenne pepper, salt, and pepper. Add the shrimp and toss until evenly coated. Let them marinate for about 15-20 minutes.

      Prepare the Mango Salsa:

        In another bowl, mix the diced mango, red onion, jalapeño, lime juice, salt, and chopped cilantro. Stir well and set aside to let the flavors meld.

          Make the Lime-Chili Sauce:

            In a small bowl, whisk together the Greek yogurt, lime juice, chili powder, and salt. If the sauce is too thick, add a little water to reach your desired consistency.

              Cook the Shrimp:

                In a skillet over medium heat, add the marinated shrimp. Cook for 3-4 minutes on each side, or until they turn pink and are cooked through. Remove from heat.

                  Prepare the Avocado Base:

                    In a bowl, gently toss the diced avocados with lime juice and a pinch of salt to prevent browning.

                      Assemble the Bowls:

                        Start with a base of cooked rice or quinoa (if using). Top with a generous scoop of the lime-dressed avocado, followed by the cooked shrimp, and finish with a generous helping of mango salsa. Drizzle the lime-chili sauce over the top.

                          Garnish:

                            Sprinkle with additional cilantro and serve with lime wedges on the side for an extra burst of flavor.
