Rosemary Garlic Steak Kebabs

1.5 lbs sirloin steak, cut into 1-inch cubes

3 tablespoons fresh rosemary, finely chopped

4 cloves garlic, minced

1/4 cup olive oil

2 tablespoons balsamic vinegar

1 teaspoon salt

1/2 teaspoon black pepper

1 red bell pepper, cut into 1-inch pieces

1 yellow bell pepper, cut into 1-inch pieces

1 red onion, cut into wedges

Wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes)

Instructions
 

Marinate the Steak: In a large mixing bowl, combine olive oil, balsamic vinegar, minced garlic, chopped rosemary, salt, and black pepper. Whisk until well combined. Add the steak cubes to the bowl and coat them evenly with the marinade. Cover and let it marinate in the refrigerator for at least 1 hour, preferably 4 hours or overnight for deeper flavor.

    Prepare the Vegetables: While the steak marinades, wash and cut the bell peppers and onion into desired sizes. You can keep them in larger pieces since they'll add great texture to the kebabs.

      Preheat the Grill: Preheat your grill to medium-high heat. If using an oven, preheat it to 400°F (200°C) and prepare a baking sheet with aluminum foil for easy cleanup.

        Assemble Kebabs: Once the steak is marinated, thread the steak cubes onto skewers, alternating with pieces of bell pepper and onion to create colorful layers. Leave a little space between each piece to ensure even cooking.

          Grill the Kebabs: Place the skewered kebabs on the preheated grill or baking sheet. Grill for about 8-10 minutes total, turning occasionally. Cook until the steak reaches your desired level of doneness (about 130°F for medium-rare). If using an oven, roast for about 20-25 minutes, turning halfway through.

            Rest and Serve: Once cooked, remove the kebabs from the grill and let them rest for 5 minutes to allow the juices to redistribute. Serve hot with your favorite dipping sauce or alongside a fresh salad.
