2 cups cooked rotisserie chicken, shredded

1 cup canned black beans, rinsed and drained

1 cup corn kernels (frozen or fresh)

1 bell pepper (red or yellow), diced

1 cup cherry tomatoes, halved

½ cup red onion, finely chopped

1 avocado, diced

¼ cup fresh cilantro, chopped

Juice of 2 limes

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper to taste

½ cup ranch dressing (optional) or a light vinaigrette

Instructions
 

In a large mixing bowl, combine the shredded rotisserie chicken, black beans, corn, bell pepper, cherry tomatoes, red onion, diced avocado, and chopped cilantro.

    In a separate small bowl, whisk together the lime juice, chili powder, cumin, salt, and pepper. This will be your dressing.
