1 ripe pineapple, peeled and sliced into rings

2 cups granulated sugar

1 cup apple cider vinegar

1 teaspoon ground cinnamon

1 teaspoon ground ginger

1/2 teaspoon ground cloves

1/2 teaspoon cayenne pepper (adjust for spice preference)

1/2 teaspoon salt

1/4 cup water

1 teaspoon vanilla extract

1 jar (16 oz) sterilized mason jars for storage

Prepare the Pineapple: Preheat your oven to 200°F (95°C) and arrange the sliced pineapple rings on a baking sheet lined with parchment paper. Bake for about 1 hour until slightly dehydrated but still a bit tender. Remove from the oven and let cool.

    Make the Syrup: In a medium saucepan, combine the sugar, apple cider vinegar, ground cinnamon, ground ginger, ground cloves, cayenne pepper, salt, and water. Bring to a gentle boil over medium heat, stirring until the sugar dissolves completely.

      Simmer: Reduce the heat to low and let the syrup simmer for about 10 minutes. Stir occasionally to ensure it doesn’t stick to the bottom of the pan.

        Add Vanilla: Remove the saucepan from the heat and stir in the vanilla extract. This adds a warm, aromatic flavor to your syrup.

          Combine Pineapple and Syrup: In a large bowl, gently place the baked pineapple rings and pour the hot syrup over them. Make sure all pieces are submerged in the syrup.

            Packing the Jars: Carefully transfer the pineapple and syrup into sterilized mason jars. Ensure there is syrup covering each piece of pineapple completely.
