Ingredients

1 lb flank steak, sliced thinly against the grain

2 tablespoons soy sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil

1 red bell pepper, sliced into strips

1 green bell pepper, sliced into strips

1 onion, sliced thinly

2 cloves garlic, minced

1 inch piece of ginger, grated

1 tablespoon oyster sauce

1 tablespoon rice vinegar

1 teaspoon sugar

Salt and pepper, to taste

Cooked rice, for serving (optional)

Instructions

Marinate the Steak: In a medium bowl, combine the sliced flank steak, soy sauce, and cornstarch. Toss to coat evenly and let it marinate for 15-20 minutes while you prepare the vegetables.

Sauté the Vegetables: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced onion, and stir-fry for 2-3 minutes until translucent. Then, add the sliced bell peppers and continue to cook for another 3-4 minutes until they are tender-crisp. Stir in the minced garlic and grated ginger, cooking for an additional 1 minute until aromatic. Transfer the vegetables to a plate and set aside.

Cook the Steak: In the same skillet, add the remaining tablespoon of vegetable oil. Once hot, add the marinated steak in a single layer (you may need to do this in batches). Cook for about 2-3 minutes until browned, then flip and cook for another 2 minutes. The steak should be browned but not overcooked.

Combine and Season: Return the sautéed vegetables to the skillet with the steak. Pour in the oyster sauce, rice vinegar, and sugar. Toss everything together and cook for another 1-2 minutes to heat through. Adjust the seasoning with salt and pepper to taste.

Serve: Serve the pepper steak hot, over cooked rice if desired, and enjoy your Sizzling Pepper Steak Delight!
