2 salmon fillets (about 6 oz each)

1 cup orzo pasta

2 cups chicken or vegetable broth

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 medium zucchini, diced

1 lemon (zest and juice)

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Crumbled feta cheese (optional, for topping)

Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes, until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

    Cook Orzo: Add the orzo pasta to the skillet and toast it lightly for 2-3 minutes, stirring frequently to prevent burning. This enhances the flavor of the pasta.
