1 pound boneless, skinless chicken thighs, cut into bite-sized pieces

1 tablespoon olive oil

3 cloves garlic, minced

1 medium onion, finely chopped

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper, to taste

4 cups baby spinach

1 cup cherry tomatoes, halved

1 cup chicken broth

1 cup heavy cream

Juice and zest of 1 large lemon

16 ounces refrigerated gnocchi

Grated Parmesan cheese, for serving

Fresh parsley, chopped, for garnish

Instructions
 

Brown the Chicken: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chicken pieces, season with salt and pepper, and sauté until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.

    Sauté the Aromatics: In the same pot, add the chopped onion and cook for 2-3 minutes until softened. Add minced garlic, thyme, and oregano, cooking for an additional minute until fragrant.

      Add the Vegetables: Stir in the spinach and cherry tomatoes, cooking until the spinach wilts and the tomatoes begin to soften, about 2-3 minutes.

        Simmer the Sauce: Pour in the chicken broth and heavy cream. Stir in the lemon juice and zest, mixing well. Bring the mixture to a gentle simmer.

          Cook the Gnocchi: Add the gnocchi to the pot, stirring gently to combine. Let it cook for about 3-5 minutes or until the gnocchi float to the top and are tender.
