No Bake Pineapple Cream Dessert

Ingredients
  

1 can (20 oz) crushed pineapple, drained

1 cup heavy whipping cream

1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup crushed graham crackers

1/4 cup unsweetened coconut flakes (optional)

Fresh pineapple chunks, for garnish

Mint leaves, for garnish

Instructions
 

In a mixing bowl, beat the heavy whipping cream until soft peaks form. Set aside.

    In another mixing bowl, combine softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.

      Gently fold the whipped cream into the cream cheese mixture, creating a light and airy texture.

        Add the drained crushed pineapple to the creamy mixture and fold carefully until well combined.

          In a serving dish, sprinkle an even layer of crushed graham crackers on the bottom.

            Spread half of the pineapple cream mixture over the graham crackers, smoothing it out with a spatula.

              Add another layer of crushed graham crackers, followed by the remaining pineapple cream mixture. Smooth the top.

                If using, sprinkle coconut flakes over the top for extra flavor and texture.

                  Cover the dessert with plastic wrap and refrigerate for at least 4 hours, or overnight, to set.

                    Before serving, garnish with fresh pineapple chunks and mint leaves for a refreshing touch.
