Mediterranean Chicken Pasta Salad

Ingredients
  

2 cups rotini pasta

1 lb boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

Juice of 1 lemon

1/4 cup balsamic vinaigrette

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Chicken: While the pasta is cooking, season the chicken breasts with olive oil, garlic powder, dried oregano, salt, and pepper. Heat a grill pan or skillet over medium-high heat. Cook the chicken for about 6-7 minutes per side, or until fully cooked and no longer pink in the center. Remove from heat and let rest for 5 minutes before slicing into bite-sized pieces.

      Combine Ingredients: In a large mixing bowl, combine the cooked rotini pasta, sliced chicken, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and parsley. Toss gently to combine.

        Dress the Salad: In a small bowl, whisk together the lemon juice and balsamic vinaigrette. Pour over the pasta salad and toss to coat all ingredients evenly.

          Chill and Serve: For best flavor, let the salad chill in the refrigerator for at least 30 minutes before serving. Enjoy chilled or at room temperature.
