2 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

2 cups baby spinach

8 ounces fettuccine pasta

Fresh basil, for garnish

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package directions until al dente. Drain and set aside.

    Prepare Chicken: Season the chicken breasts with salt and pepper. In a large skillet over medium-high heat, add olive oil. Once hot, cook the chicken for about 6-7 minutes on each side, or until cooked through and golden brown. Remove from the skillet and set aside to rest.

      Create the Sauce: In the same skillet, add minced garlic and cook for about 1 minute until fragrant. Add the cherry tomatoes and sauté for another 2-3 minutes until they start to soften.

        Add Cream and Cheese: Reduce the heat to low, then pour in the heavy cream, stirring to combine. Add Parmesan cheese and Italian seasoning, mixing until the cheese melts and the sauce thickens slightly.

          Add Spinach: Stir in the baby spinach and allow it to wilt in the sauce for about 2 minutes.

            Combine Pasta and Chicken: Slice the cooked chicken and add it back to the skillet with the sauce. Toss in the cooked fettuccine, making sure everything is well-coated in the creamy sauce. Cook for an additional 2-3 minutes until heated through.
