Marry Me Chicken Pasta Recipe

Ingredients
  

2 boneless, skinless chicken breasts

1 tablespoon olive oil

Salt and pepper to taste

3 garlic cloves, minced

1 teaspoon Italian seasoning

1 cup sun-dried tomatoes, chopped

1 cup heavy cream

1 cup chicken broth

½ cup grated Parmesan cheese

8 oz penne pasta

2 cups fresh spinach

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil and cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Sear the Chicken: In a large skillet over medium-high heat, add olive oil. Season the chicken breasts with salt and pepper. Once the oil is hot, add the chicken and sear for about 6-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and let it rest.

      Prepare the Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Stir in Italian seasoning and chopped sun-dried tomatoes, cooking for another minute.

        Create a Creamy Base: Pour in the heavy cream and chicken broth, stirring well. Bring to a simmer, then add the grated Parmesan cheese, stirring until melted and smooth.

          Add Spinach: Reduce the heat to low, and add the fresh spinach into the sauce, stirring until wilted.

            Combine Pasta and Chicken: Slice the rested chicken into strips and add it to the skillet along with the drained penne pasta. Toss everything together in the creamy sauce until well combined and heated through.

              Garnish and Serve: Serve the pasta hot, garnished with fresh basil leaves. If desired, sprinkle additional Parmesan on top.
