8 large eggs

1 cup egg whites

1 cup cooked black beans (drained and rinsed)

1 cup diced bell peppers (mixed colors)

1 cup diced onion

1 cup cooked and crumbled turkey sausage (or plant-based sausage)

1/2 cup shredded low-fat cheese (cheddar or Mexican blend)

1 teaspoon ground cumin

1 teaspoon paprika

Salt and pepper to taste

8 whole wheat tortillas (burrito size)

Fresh cilantro and avocado for topping (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper for easy cleanup.

    Prepare the Filling: In a large mixing bowl, whisk together the large eggs and egg whites until well combined. Stir in the cooked black beans, bell peppers, onion, turkey sausage, shredded cheese, cumin, paprika, salt, and pepper. Mix until all ingredients are evenly distributed.

      Bake the Egg Mixture: Pour the egg mixture onto the prepared baking sheet, spreading it evenly across the pan. Bake in the preheated oven for about 20-25 minutes, or until the eggs are fully cooked and set.

        Cool and Cut: Once baked, remove the sheet pan from the oven and let it cool for a few minutes. Using a sharp knife, carefully cut the egg mixture into 8 equal squares (or rectangles).
