8 ounces spaghetti or linguine

1 pound large shrimp, peeled and deveined

3 tablespoons olive oil

4 cloves garlic, minced

Zest and juice of 1 lemon

1 cup fresh spinach, roughly chopped

½ teaspoon red pepper flakes (optional)

Salt and pepper, to taste

¼ cup grated Parmesan cheese, plus more for serving

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add the spaghetti or linguine and cook according to package instructions until al dente. Drain the pasta and reserve about ½ cup of the pasta water.

    Cook the Shrimp: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the shrimp to the skillet in a single layer (you may need to do this in batches) and season with salt and pepper. Cook for about 2-3 minutes per side or until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.

      Make the Sauce: In the same skillet, add the remaining tablespoon of olive oil. Reduce the heat to medium and add the minced garlic and red pepper flakes (if using). Sauté for about 1 minute until fragrant, being careful not to burn the garlic.

        Combine Ingredients: Add the cooked pasta, shrimp, lemon zest, and lemon juice to the skillet. Toss everything together gently, adding the reserved pasta water a little at a time to help create a light sauce.
