8 oz whole grain pasta (fusilli or penne)

1 cup cherry tomatoes, halved

1 cup cucumbers, diced

1/2 cup red onion, thinly sliced

1 cup fresh basil leaves, chopped

1/4 cup Kalamata olives, pitted and halved

1/4 cup nutritional yeast (optional for a cheesy flavor)

1/4 cup olive oil

Juice and zest of 1 large lemon

2 tablespoons apple cider vinegar

1 teaspoon Dijon mustard

Salt and black pepper to taste

A pinch of red pepper flakes (optional for heat)

Cook the Pasta: In a large pot, bring water to a boil. Add a pinch of salt and the whole grain pasta. Cook according to package directions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Veggies: While the pasta is cooking, chop the cherry tomatoes, cucumbers, red onion, and basil. Place them in a large mixing bowl.

      Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice, lemon zest, apple cider vinegar, Dijon mustard, nutritional yeast (if using), salt, black pepper, and red pepper flakes. Taste and adjust seasoning as needed.
