1 lb ground beef (preferably 80/20)

4 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/4 cup soy sauce (low sodium preferred)

2 tablespoons brown sugar

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon red pepper flakes (adjust to taste)

1 cup scallions, chopped (both green and white parts)

1 cup cooked jasmine rice (or any rice of your choice)

1/2 cup shredded carrots

1/4 cup sesame seeds (toasted, optional)

Fresh cilantro or parsley for garnish (optional)

Sliced cucumbers or kimchi (for serving)

Cook the Beef: In a large skillet over medium-high heat, add the ground beef. Break it apart with a spatula and cook until it's browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.

    Add Aromatics: Reduce the heat to medium and add the minced garlic and ginger to the beef. Sauté for 1-2 minutes until fragrant.

      Create the Sauce: In a small bowl, whisk together the soy sauce, brown sugar, sesame oil, rice vinegar, and red pepper flakes. Pour this mixture over the cooked beef and stir to combine. Let it simmer for another 2-3 minutes for the flavors to meld.
