2 cups all-purpose flour

1 cup granulated sugar

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon salt

1 cup unsweetened applesauce

2 large eggs

½ cup vegetable oil

1 teaspoon vanilla extract

1 ½ cups peeled, diced apples (preferably Granny Smith)

½ cup chopped walnuts or pecans (optional)

1 teaspoon lemon juice

2 tablespoons brown sugar (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with cooking spray.

    Prepare the Apples: In a bowl, toss the diced apples with lemon juice to prevent browning. Set aside.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, ground cinnamon, and salt until well combined.

        Combine Wet Ingredients: In another bowl, mix the applesauce, eggs, vegetable oil, and vanilla extract. Whisk until smooth and combined.
