2 cups all-purpose flour

1 cup granulated sugar

1 tablespoon baking powder

1 teaspoon ground cinnamon

½ teaspoon salt

2 large eggs

½ cup unsalted butter, melted and cooled

1 cup whole milk

2 teaspoons vanilla extract

2 cups peeled and diced apples (preferably Honeycrisp or Granny Smith)

½ cup chopped walnuts or pecans (optional)

2 tablespoons brown sugar (for topping)

1 teaspoon ground cinnamon (for topping)

Instructions
 

Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or lightly grease it.

    In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, and salt until well combined.

      In another bowl, beat the eggs and then add the melted butter, whole milk, and vanilla extract. Mix until smooth.

        Pour the wet ingredients into the dry ingredients and gently fold together using a spatula. Don’t overmix; it’s okay if a few flour streaks remain.

          Carefully fold in the diced apples and chopped nuts if using.

            In a small bowl, mix the brown sugar and additional cinnamon for the topping.

              Scoop the batter evenly into the prepared muffin tin, filling each cup about ¾ full. Sprinkle the cinnamon sugar mixture generously over the tops of each muffin.

                Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. The muffins should be golden brown and slightly domed.

                  Once done, remove the muffins from the oven and let them cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
