2 cups apple cider

1 cup all-purpose flour

1 cup whole wheat flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon salt

¾ cup granulated sugar

2 large eggs

½ cup unsweetened applesauce

¼ cup vegetable oil

1 teaspoon vanilla extract

½ cup cinnamon sugar (1/2 cup granulated sugar mixed with 1 tablespoon cinnamon for coating)

Instructions
 

Reduce the Apple Cider: In a medium saucepan, bring the apple cider to a boil over medium heat. Reduce heat to low and simmer until the volume is reduced to about 1 cup, approximately 15-20 minutes. Set aside to cool slightly.

    Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a donut pan with non-stick spray or oil.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt until well combined.

        Mix Wet Ingredients: In another bowl, combine the granulated sugar, eggs, applesauce, vegetable oil, vanilla extract, and the reduced apple cider. Whisk until smooth and well incorporated.

          Combine Mixtures: Gradually add the wet ingredients into the dry ingredients, mixing gently until just combined. Be careful not to overmix; a few lumps are perfectly fine.
