Ingredients

1 cup all-purpose flour

2 tablespoons sugar

2 teaspoons baking powder

¼ teaspoon salt

1 cup milk

1 large egg

2 tablespoons melted butter

½ cup mini marshmallows

½ cup chocolate chips

½ cup graham cracker crumbs

Extra mini marshmallows and chocolate for topping

Instructions

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until combined.

In another bowl, mix the milk, egg, and melted butter until smooth.

Pour the wet ingredients into the dry ingredients and mix gently until just combined (a few lumps are okay).

Fold in the mini marshmallows, chocolate chips, and graham cracker crumbs until evenly distributed.

Heat a non-stick skillet or griddle over medium heat and lightly grease it with oil or cooking spray.

Pour about ¼ cup of pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for an additional 2 minutes until golden brown.

Once cooked, remove the pancakes and keep warm. Repeat with remaining batter.

Stack pancakes on a serving plate and top with extra mini marshmallows and chocolate pieces.

Optionally, broil the topped pancakes for 1-2 minutes to toast the marshmallows lightly.

Drizzle with chocolate syrup and serve hot!
