When embarking on your culinary adventure with Spicy Sweet Hot Honey Salmon Bites, the first step is to secure high-quality, fresh salmon. The type of salmon you choose can significantly impact the flavor and texture of your dish. Opt for wild-caught salmon rather than farmed when possible, as it tends to have a firmer texture and a more robust flavor. Fresh salmon should have a vibrant color and a mild, ocean-like aroma. Avoid any fillets that appear dull or have an overly fishy smell, as these are telltale signs of age.

Ingredients

1 pound salmon fillet, skinless and boneless

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

1/4 teaspoon red pepper flakes (adjust based on spice preference)

1/3 cup honey

2 tablespoons sriracha (or to taste)

1 tablespoon lime juice

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Prepare the Salmon: Cut the salmon into bite-sized cubes (about 1-inch pieces) and place them in a medium bowl.

Season the Salmon: Drizzle the olive oil over the salmon. Sprinkle with garlic powder, smoked paprika, salt, black pepper, and red pepper flakes. Toss gently to coat all pieces evenly.

Make Hot Honey Sauce: In a small saucepan over medium heat, combine the honey, sriracha, and lime juice. Stir until well combined and heated through, about 2-3 minutes. Set aside half of the sauce for serving.

Cook the Salmon: Preheat a large non-stick skillet over medium-high heat. Add the seasoned salmon bites in a single layer (you may need to do this in batches). Cook for 2-3 minutes on each side or until they are golden brown and cooked through (internal temperature should reach 145°F).

Glaze the Salmon: In the last minute of cooking, drizzle the hot honey sauce over the salmon bites in the skillet, gently tossing to coat them evenly.

Serve: Transfer the glazed salmon bites to a serving platter. Drizzle with the reserved hot honey sauce, top with chopped cilantro, and serve with lime wedges on the side.
