Ingredients
  

2 medium sweet potatoes, diced

2 tablespoons olive oil

Salt and pepper, to taste

4 cups mixed greens (arugula, spinach, kale)

1 cup cherry tomatoes, halved

1/2 cup red onion, thinly sliced

1/4 cup feta cheese, crumbled

1/4 cup walnuts, toasted and roughly chopped

1/4 cup honey

2 tablespoons apple cider vinegar

1 tablespoon Dijon mustard

1 teaspoon garlic powder

Fresh herbs (such as cilantro or basil) for garnish

Instructions
 

Roast the Sweet Potatoes: Preheat the oven to 425°F (220°C). In a mixing bowl, toss the diced sweet potatoes with olive oil, salt, and pepper. Spread them out in a single layer on a baking sheet and roast for 25-30 minutes, or until tender and slightly caramelized, flipping halfway through. Allow them to cool.

    Prepare the Dressing: In a small bowl, whisk together honey, apple cider vinegar, Dijon mustard, garlic powder, and a pinch of salt and pepper until well combined. Adjust seasoning to taste.
