Ingredients

1 pound baby carrots (or regular carrots, peeled and cut into sticks)

3 tablespoons unsalted butter, melted

2 tablespoons honey

3 cloves garlic, minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a mixing bowl, combine the melted butter, honey, minced garlic, thyme, salt, and pepper. Whisk together until well blended.

Add the baby carrots to the bowl and toss them in the honey garlic butter mixture, ensuring they are evenly coated.

Spread the coated carrots in a single layer on the prepared baking sheet.

Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and starting to caramelize, stirring halfway through for even cooking.

Remove from oven and transfer to a serving dish. Drizzle with any remaining honey butter from the baking sheet, and toss to coat.

Garnish with freshly chopped parsley if desired, and serve warm.
