Ingredients

1 lb ground beef

4 medium potatoes, thinly sliced

1 medium onion, diced

2 cups green beans (fresh or frozen)

1 can (10.5 oz) cream of mushroom soup

1 cup shredded cheddar cheese

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

1 tbsp olive oil

Optional: ½ cup milk (for a creamier texture)

Instructions

Preheat Oven: Preheat your oven to 375°F (190°C).

Cook the Beef: In a large skillet over medium heat, add the olive oil. Once hot, add the ground beef and cook until browned and fully cooked. Break it up with a spatula as it cooks. Drain excess fat.

Prepare Vegetables: In the same skillet, add diced onions and cook until translucent, about 3-4 minutes. If desired, lightly season with salt and pepper.

Mix Soup: In a mixing bowl, combine the cream of mushroom soup and milk (if using). Stir in garlic powder, onion powder, salt, and pepper until smooth.

Layer Ingredients: In a large greased casserole dish, begin layering your ingredients. Start with half of the sliced potatoes, spreading them evenly. Next, add the cooked ground beef and onions, followed by the green beans. Pour half of the soup mixture over this layer. Repeat the layers with the remaining potatoes, beef mixture, and finish with the remaining soup mixture on top.

Cheese Topping: Sprinkle the shredded cheddar cheese evenly over the entire casserole.

Cover & Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 45 minutes. After 45 minutes, remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the cheese is bubbly and golden.

Serve: Remove from the oven and let sit for about 5 minutes before serving. Enjoy your hearty and delicious Hobo Casserole!
