2 cups shredded cooked chicken (rotisserie chicken works great!)

1 cup black beans (canned, rinsed and drained)

1 cup low-fat cottage cheese

1 cup salsa

1 tsp taco seasoning

8 small whole wheat tortillas

1 cup shredded low-fat cheese (like Mexican blend or Cheddar)

Instructions
 

Preheat oven to 375°F (190°C).

    In a medium mixing bowl, combine the shredded chicken, black beans, cottage cheese, salsa, and taco seasoning. Mix well until all ingredients are thoroughly combined.

      Prepare tortillas by warming them in the microwave for about 15-20 seconds until pliable, making them easier to roll.

        Assemble enchiladas: Spoon about 1/4 cup of the chicken mixture into the center of each tortilla. Roll them up tightly and place them seam-side down in a greased baking dish.

          Once all tortillas are filled and placed in the dish, pour the remaining salsa (if any) over the top and sprinkle with shredded cheese.

            Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.

              Serve hot, garnished with additional salsa or avocado if desired.
