4 chicken thighs, bone-in and skin-on

1/2 cup soy sauce

1/4 cup brown sugar

1/4 cup rice vinegar

3 cloves garlic, minced

1 tablespoon ginger, grated

2 tablespoons sesame oil

1 tablespoon honey

1 teaspoon black pepper

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Cooked rice (to serve)

Instructions
 

Marinate the Chicken: In a mixing bowl, combine soy sauce, brown sugar, rice vinegar, minced garlic, grated ginger, sesame oil, honey, and black pepper. Whisk until well combined.

    Add Chicken: Place the chicken thighs in a large zip-top bag or shallow dish. Pour the marinade over the chicken, ensuring it’s well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour (or up to overnight for deeper flavor).

      Preheat the Oven: Preheat your oven to 375°F (190°C) while the chicken marinates.

        Sear the Chicken: Heat a large, oven-safe skillet over medium-high heat. Remove the chicken from the marinade, reserving the marinade. Add the chicken, skin side down, and sear for about 5-7 minutes until the skin is crispy and golden.

          Bake the Chicken: Flip the chicken skin side up and pour the reserved marinade over it. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and an internal temperature of 165°F (75°C) is reached.

            Glaze the Chicken: For a glossy finish, turn the oven to broil in the last 5 minutes, keeping a close eye to avoid burning.

              Serve: Remove the skillet from the oven. Let the chicken rest for a few minutes before serving. Garnish with chopped green onions and sesame seeds. Serve with cooked rice to soak up the delicious sauce!
