1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 bell pepper (red or yellow), diced

1 small red onion, diced

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon paprika

½ teaspoon chili powder

Salt and pepper to taste

2 tablespoons olive oil

2 cups baby spinach

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

In a large skillet, heat olive oil over medium heat. Add the diced sweet potatoes and sauté for about 5-7 minutes, or until slightly tender.

    Add the diced red onion and bell pepper to the skillet. Continue to sauté for another 5 minutes until the vegetables are soft and fragrant.

      Push the vegetables to one side of the skillet and add the ground turkey to the empty side. Break it apart with a spatula, cooking until browned and cooked through (about 5-7 minutes).

        Stir in the minced garlic, cumin, paprika, and chili powder, mixing everything together. Cook for an additional minute or until the garlic is fragrant.

          Season with salt and pepper to taste. Finally, add the baby spinach and stir until wilted, about 2 minutes.

            Remove from heat and serve warm, garnished with fresh cilantro and lime wedges on the side.
