Ground Turkey Sweet Potato Casserole

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 cup diced onion

2 cloves garlic, minced

1 cup bell peppers, diced (any color)

1 cup corn (frozen or canned)

1 cup black beans, rinsed and drained

1 tsp paprika

1 tsp cumin

Salt and pepper to taste

1 cup shredded cheddar cheese

2 tbsp olive oil

1/2 cup chicken broth

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Sweet Potatoes: In a large pot, bring water to a boil. Add the diced sweet potatoes and cook for about 10-12 minutes until tender. Drain and set aside.

      Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and bell peppers, and cook for another 3-4 minutes until softened.

        Brown the Turkey: Push the vegetable mixture to one side of the skillet and add the ground turkey. Season with paprika, cumin, salt, and pepper. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.

          Combine Ingredients: Once the turkey is cooked, stir in the corn, black beans, and cooked sweet potatoes. Pour in the chicken broth and stir until well combined. Let it simmer for 2-3 minutes.

            Transfer to Baking Dish: Transfer the turkey and vegetable mixture to a greased 9x13 inch baking dish. Spread it out evenly.

              Add Cheese: Sprinkle the shredded cheddar cheese evenly over the top of the casserole.

                Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden brown.

                  Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
