Grilled Zucchini Greek Salad

Ingredients
  

2 medium zucchinis, sliced into ½ inch rounds

1 bell pepper (any color), diced

1 cup cherry tomatoes, halved

½ red onion, thinly sliced

1 cup cucumber, diced

½ cup Kalamata olives, pitted and halved

½ cup feta cheese, crumbled

¼ cup olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your grill over medium heat.

    In a large bowl, toss the zucchini rounds with 1 tablespoon of olive oil, salt, and pepper.

      Place the zucchini on the grill and cook for about 3-4 minutes per side, until grill marks appear and the zucchini is tender. Remove from grill and let it cool slightly before cutting into quarters.

        In a large salad bowl, combine the grilled zucchini, bell pepper, cherry tomatoes, red onion, cucumber, and Kalamata olives.

          In a small bowl, whisk together the remaining olive oil, red wine vinegar, dried oregano, salt, and pepper to create a dressing.

            Pour the dressing over the salad and gently toss to combine all ingredients.

              Sprinkle the crumbled feta cheese and chopped parsley on top of the salad just before serving for added flavor.

                Serve chilled or at room temperature, and enjoy your refreshing grilled zucchini Greek salad!
