Ingredients
  

2 ripe nectarines, pitted and halved

8 oz burrata cheese

4 oz thinly sliced prosciutto

4 cups mixed salad greens (arugula, spinach, and microgreens)

1/4 cup toasted pine nuts

2 tablespoons balsamic glaze

2 tablespoons extra virgin olive oil

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat Grill: Heat your grill or grill pan on medium-high heat.

    Grill Nectarines: Brush the cut sides of the nectarine halves lightly with olive oil and sprinkle with a pinch of salt. Place them cut-side down on the grill. Grill for about 3-4 minutes or until grill marks appear and they are soft but not mushy. Remove from the grill and let them cool slightly.

      Prepare Greens: In a large bowl, combine mixed salad greens, and drizzle with the remaining olive oil. Season with salt and pepper to taste, tossing gently to coat.

        Assemble the Salad: On a large serving platter, arrange the dressed greens. Tear the burrata cheese and place it in the center of the greens.

          Add Prosciutto and Grilled Nectarines: Distribute the grilled nectarines around the burrata, and layer the prosciutto slices over the salad.
