500g (1 lb) chicken breast, cubed

200g (1 cup) plain yogurt

2 tablespoons lemon juice

2 teaspoons ground cumin

2 teaspoons ground coriander

1 teaspoon turmeric

1 teaspoon garam masala

1 teaspoon chili powder

1 teaspoon salt

2 cloves garlic, minced

1 inch ginger, grated

For the Tikka Masala Sauce:

2 tablespoons vegetable oil

1 large onion, finely chopped

2 cloves garlic, minced

1 inch ginger, grated

1 green chili, chopped (adjust to taste)

400g (14 oz) canned tomatoes, pureed

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon garam masala

1 teaspoon sugar (optional)

200ml (¾ cup) coconut cream or heavy cream

Salt and pepper to taste

Fresh cilantro for garnish

Instructions
 

Marinate the Chicken:

    - In a bowl, mix yogurt, lemon juice, cumin, coriander, turmeric, garam masala, chili powder, salt, garlic, and ginger. Add the cubed chicken and mix thoroughly. Cover and let it marinate for at least 1 hour, or overnight for best results in the refrigerator.

      Prepare the Chicken:

        - Preheat your oven to 200°C (400°F). Spread the marinated chicken on a baking tray and bake for 15-20 minutes until cooked through and slightly charred.

          Make the Sauce:

            - In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Add the garlic, ginger, and green chili, and cook for another 2 minutes until fragrant.

                    - Stir in the coconut cream (or heavy cream) and cooked chicken, allowing it to simmer for another 5-7 minutes. Season with salt and pepper to taste.
