For the Chicken Marinade:

500g boneless chicken thighs, cut into bite-sized pieces

200g plain yogurt

2 tablespoons lemon juice

4 garlic cloves, minced

1 tablespoon fresh ginger, grated

2 teaspoons ground cumin

2 teaspoons ground coriander

1 teaspoon garam masala

1 teaspoon chili powder

Salt to taste

For the Sauce:

2 tablespoons vegetable oil

1 large onion, finely chopped

4 garlic cloves, minced

1 tablespoon fresh ginger, grated

1 tablespoon ground coriander

1 teaspoon ground cumin

1 teaspoon turmeric

1 teaspoon paprika

1 teaspoon garam masala

400g canned tomatoes (crushed)

200ml coconut milk

Salt and pepper to taste

Fresh cilantro, for garnish

Instructions
 

Marinate the Chicken:

    - In a bowl, combine yogurt, lemon juice, minced garlic, grated ginger, cumin, coriander, garam masala, chili powder, and salt. Mix well.

      - Add the chicken pieces to the marinade ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.

        Cook the Chicken:

          - Preheat your oven to 200°C (400°F).

            - Spread the marinated chicken in a single layer on a baking tray. Bake for 15-20 minutes until cooked through, or until slightly charred on the edges.

              Prepare the Sauce:

                - In a large skillet, heat the vegetable oil over medium heat. Add the chopped onions and cook until soft and translucent, about 5 minutes.

                  - Stir in the minced garlic and grated ginger, cooking for another minute until aromatic.

                    - Add ground coriander, cumin, turmeric, paprika, and garam masala. Stir for 1-2 minutes to toast the spices.

                      - Pour in the crushed tomatoes, and bring to a simmer. Cook for 10 minutes, stirring occasionally.

                        Combine Chicken with Sauce:

                          - Once the sauce has thickened, add the baked chicken pieces to the skillet. Mix well to coat the chicken with the sauce.

                            - Pour in the coconut milk, and let it simmer for an additional 5-10 minutes. Adjust seasoning with salt and pepper.

                              Serve:

                                - Garnish the Chicken Tikka Masala with fresh cilantro.

                                  - Serve hot with basmati rice or naan bread for a complete meal.
