Garlic Butter Steak Bites and Potatoes

1 lb sirloin steak, cut into bite-sized cubes

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Prepare the Potatoes: In a pot of salted water, add the halved baby potatoes. Bring to a boil, then reduce to a simmer and cook for about 10-15 minutes until fork-tender. Drain and set aside.

    Season the Steak: While the potatoes are cooking, season the cubed steak with salt, pepper, and a sprinkle of dried thyme and rosemary. Ensure all pieces are well coated.

      Sear the Steak Bites: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the steak bites in a single layer, making sure not to overcrowd the pan.
