For the Steak Bites:

1 lb sirloin steak, cut into bite-sized cubes

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)

Salt and pepper to taste

1 tablespoon olive oil

For the Potatoes:

1 lb baby potatoes, halved

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Potatoes:

    - Preheat your oven to 400°F (200°C).

      - In a large bowl, toss the halved baby potatoes with olive oil, garlic powder, paprika, salt, and pepper until they are well coated.

        - Spread the potatoes in a single layer on a baking sheet. Roast in the preheated oven for about 25-30 minutes, or until golden brown and tender, stirring halfway through.

          Cook the Steak Bites:

            - While the potatoes are roasting, season the steak cubes generously with salt and pepper.

              - In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Once hot, add the steak bites in a single layer without overcrowding the pan. Sear for about 2-3 minutes on each side until a nice crust forms. You may need to do this in batches.

                - Remove the steak bites from the skillet and set them aside on a plate.

                  Make the Garlic Butter:
