Garlic Butter Steak and Potatoes Skillet

Ingredients
  

1 lb (450g) sirloin steak, cut into bite-sized cubes

1 lb (450g) baby potatoes, halved

4 tbsp unsalted butter

4 cloves garlic, minced

1 tsp fresh rosemary, chopped (or ½ tsp dried)

1 tsp fresh thyme, chopped (or ½ tsp dried)

Salt and pepper, to taste

1 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Potatoes: Place halved baby potatoes in a pot of salted water. Bring to a boil and cook for about 10-12 minutes or until fork-tender. Drain and set aside.

    Sear the Steak: In a large skillet, heat olive oil over medium-high heat. Season the steak cubes with salt and pepper. Once the oil is hot, add the steak to the skillet. Sear each side for 2-3 minutes until nicely browned. Remove the steak from the skillet and set aside.

      Cook the Potatoes: In the same skillet (do not clean), add 2 tbsp of butter. Add the parboiled potatoes and cook on medium heat, stirring occasionally, for about 5-7 minutes until they are golden brown and crispy.

        Add Garlic and Herbs: Lower the heat to medium-low. Push the potatoes to one side of the skillet and add the remaining 2 tbsp of butter. Add minced garlic, rosemary, and thyme to the melted butter and cook for 1-2 minutes until fragrant.

          Combine Ingredients: Return the steak to the skillet, tossing it with the garlic butter and potatoes. Cook everything together for an additional 2-3 minutes to let the flavors meld. Adjust seasoning with extra salt and pepper if desired.
