Ingredients

2 cups penne pasta

1 lb (450g) boneless, skinless chicken breasts, diced

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup baby spinach

½ cup heavy cream

½ cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

Sauté the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the diced chicken and season with salt, pepper, and Italian seasoning. Cook for about 5-7 minutes, or until the chicken is golden brown and fully cooked.

Add Garlic and Tomatoes: Reduce the heat to medium and add the minced garlic to the skillet. Sauté for about 1 minute until fragrant. Add the halved cherry tomatoes and cook for an additional 5 minutes until they begin to soften.

Incorporate Spinach and Cream: Stir in the baby spinach and let it wilt for about 2 minutes. Pour in the heavy cream and mix well. Bring the mixture to a gentle simmer and cook for another 2-3 minutes.

Combine Pasta and Cheese: Add the cooked penne pasta to the skillet, stirring to coat the pasta with the creamy sauce. Finally, mix in the grated Parmesan cheese until well combined and creamy.

Serve: Taste and adjust seasoning if necessary. Serve hot, garnished with fresh basil leaves if desired.
