Easy Spinach and Ricotta Stuffed Shells – A Healthy Veggie Dinner

12 jumbo pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 egg, beaten

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

2 cups marinara sauce

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    Cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside.

      In a large mixing bowl, combine the chopped spinach, ricotta cheese, half of the mozzarella cheese, Parmesan cheese, beaten egg, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are thoroughly combined.

        Spoon a heaping tablespoon of the spinach and ricotta mixture into each pasta shell. Place the stuffed shells in a greased baking dish.

          Pour marinara sauce over the stuffed shells, ensuring they are well covered. Sprinkle the remaining mozzarella cheese on top.

            Cover the baking dish with foil and bake for 25 minutes.

              After 25 minutes, remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

                Remove from the oven and arrange fresh basil leaves on top for garnish before serving.
