3 medium potatoes, diced (Yukon gold or red potatoes work best)

1 cup bell peppers, diced (mix of red and green for color)

1 small onion, diced

1 cup cooked bacon or sausage, chopped (optional for a vegetarian version)

4 large eggs

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

1/2 cup shredded cheddar cheese

Fresh parsley or chives for garnish

Olive oil for cooking

Prepare the Potatoes: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced potatoes and season with salt, pepper, garlic powder, and paprika. Cook for about 10-15 minutes, stirring occasionally, until they are golden brown and tender.

    Add the Vegetables: Once the potatoes are nearly cooked, add the diced onion and bell peppers to the skillet. Cook for an additional 5-7 minutes until the vegetables soften.
